Strata Italian Quiche

This recipe is made with fresh ingredients but can
still be made ahead of time and popped into the
oven, just minutes before company arrives

• 1 loaf bread sliced
• 6 eggs
• ½ cup cream
• Beat eggs add cream add a pinch nutmeg salt and
• Any filling you desire: fresh herbs, asparagus,
broccoli, zucchini, tomatoes, goat cheese,
spinach, bacon, leeks, scallions, roasted garlic,
artichoke hearts, nasturtium leaves, prosciutto,
• pancetta, sun-dried tomatoes, red onion
• Line 6” round casserole with the bread, add filling,
and eggs
• Bake 15-20 minutes at 350 degrees or until filling is firm

Grilled Piri Piri Leg of Lamb

1 leg of lamb - butterflyed
1/4 bottle Harmony Farm Piri Piri
Salt & Pepper

Marinate minimum 15 minutes or overnight.

Sear on the grill over high heat for 3 minutes on each site.
Turn the heat to low.
Bast with Piri Piri
Cook for an additional 15-20 minutes for medium rare, flipping occassionally.

Silk Road Rice

1 cup Basmati rice
1 onion finely diced
1 rib celery diced
2 tbsp Harmony Farm Silk Road Curry
1 tbsp butter
salt & pepper
2 cups water or chicken stock

Saute onion, celery, salt and peper in a medium saucepan with butter until soft. Add Harmony Farm Silk Road Curry. Add rice and water. Cover and bring to a boil. Turn heat to low, simmer 15 minutes. Turn off and let stand covered for 10 minutes.

BBQ Tikka Chicken

1 whole chicken cut into pieces
1 ½ cups plain yogurt
1 tsp salt
3 tbsp lemon juice
1 small onion diced
1 tbsp garlic minced
1 tbsp ginger minced
1 chili chopped
2 tsp garam masala
3 tbsp “Patak’s” tikka paste

Rub chicken with salt and lemon, add all other ingredients, and mix set aside 5-6 hrs.

Leaving the chicken overnight to marinate would be ideal. On a hot bbq, oil the grill well and sear off the chicken taking care, as it will stick! Set on upper rack on tinfoil or under VERY low heat turning every 5-10 mins. Cook thoroughly.

Moroccan chicken

¼ cup tamarind
2 tbsp ginger
2 tbsp garlic
2 tbsp lemon grass
2 tbsp lime juice
1 tsp sugar

Chicken cut into 1 inch cubs

Toss in marinade put onto skewers

Curried Cauliflower 375* 20-30 min
1 cauliflower cut into small florets
2 tbsp curry powder
1 tsp whole coriander seed
½ tsp black mustard seed
½ tsp yellow mustard seed
1 tbsp garlic minced
1 tbsp fresh ginger minced
3-4 tbsp oil
¼ apple juice

Coriander Crusted Salmon

1 cup bread crumbs
½ cup crushed coriander seeds

Season salmon portion

1) Dry toast coriander seeds and add to seasoned bread crumbs.

2) Press into presentation side of salmon

3) Sear over high heat bake 5 min 350*F

Pork Tenderloin

350*f for 25 min

Pork Tenderloin butterflied
1 onion finely diced
1-cup spinach packed tightly
2 large grated apples
1 tbsp butter
3 fresh sage leaves chopped or 1 tsp dried
1/3 cup breadcrumbs
Salt and pepper

-Sauté onion, apple, sage, salt and pepper in a medium saucepan with butter until soft. Add spinach and wilt set aside and cool. Add the, sage, salt and pepper. Add the bread crumbs a little at a time until desired consistency-should be slightly “sticky”.
Salt and pepper the loin and place the mixture in the middle and tie with string.
Place on a baking sheet lined with parchment paper

Hot Or Cold Healthy Salads

Lentil Salad
1cup lentils rinsed and picked over
1tbsp garlic
1 red onion diced
1 tbsp grnd cumin or coriander, or curry powder
4 tbsp lemon juice

2 tbsp olive oil
salt & pepper

1 small onion sweated
1cup rice
2 cups water
3 tbsp Silk Road Curry
1-2 tsp salt
1 tbsp butter (optional)

Rinse thoroughly checking for small stones. Try soaking rice up to 1 hr prior to cooking, you may end with a more “relaxed” rice. Sweat rice add silk road curry, add rice. Bring to a boil--a good “rumble”—cover with a tight lid and turn off. Set timer 15 min. and DON’T PEEK!!

Fluff with a fork when ready to serve.

Buttermilk Pancakes

2 cups flour
1 tbsp sugar (optional)

1 tsp baking powder
1 tsp baking soda
2 eggs separated
2 cups buttermilk
¼ cup butter melted

Wisk together dry ingredients. Add egg yolks and buttermilk Wisk to combine. Add butter. Wisk together. Whip egg white to the stiff peak stage, fold into the other ingredients.

Line casserole with the bread add filling and eggs. Bake 15-20 *350

Filling ideas –fresh herbs, asparagus, broccoli, zucchini, tomatoes, goat cheese, spinach, bacon, leeks, scallions, roasted garlic, artichoke hearts, nasturtium leaves, proscitto, pancetta, sun-dried tomatoes, red onion.

Stuffed French Toast (4 people)

4 eggs
1 cup milk
½ cup cream
1 tsp cinnamon, star anise, clove, all spice
1 tsp salt
1 tsp pepper

Wisk all ingredients together

Thickly sliced chullah (egg bread or cinnamon raison bread).

¾ cup mascarpone cheese mixed with similar spices that are in the batter.

Make a small incision in the slice of bread spoon or pipe in the cheese.

Fillo Crowned Apple Nut Tart

350*F 5-10 min

3 apples peeled cored diced finely
3 tbsp walnuts chopped
1 tbsp sugar
1 tsp lemon
½ tsp cinnamon
2 tbsp butter

Melt butter and sweat all ingredients in a small saucepan on medium heat, cook until apples are tender 3 min.

Place in small ramekins or bowls and set aside

1 sheet of Phyllo brush generally with melted butter. Cut in 4 scrunch loosely and place on ramekins.


400* 15 min

1 sheet of puff pastry rolled out

Apples or Pears

Toss with:
2tbsp sugar
¼ tsp nutmeg
¼ tsp cinnamon
¼ tsp all spice
1 egg beaten
1 tbsp water

Place fruit in center of puff pastry. Brush edges with egg wash. Fold one long edge over then the sides and crimp. Flip onto a baking sheet lined with parchment. Brush with egg wash. Sprinkle some sugar on top (optional).
